This week I sat down with my More with Less cookbook when I menu planned. Can you tell?
There is some cottage cheese to use up. And we really need to keep eating those sweet potatoes in the closet as their quality is not improving any more at this point.
I am also going to start doing a better job at having something decent ready to eat after church on Sundays. We often stop and grab something quick on our way home (read: fast food) because Brad sometimes has to get to work quickly or the leftovers in the fridge just don’t sound appetizing. Yesterday I happened to have a casserole in the fridge so before we left for church I put it in the oven on time bake. As we were sitting there eating it, Brad said I should do that more often. So yay to eating out less!
Monday: Roast Chicken, Sweet Potato Fries, Salad with this dressing
Tuesday: Chicken Veggie Soup, Sweet Potato Biscuits
Wednesday: Skillet Beef with Lentils (More with Less, p. 107), Green Beans
Thursday: Scalloped Potatoes with Ham, Broccoli
Friday: Cottage Cheese Casserole (More with Less, p. 123), Green Beans, Pickles
Saturday: Poor Man’s Steak, Mashed Potatoes, Peas Oops. We have a wedding to attend. I won’t be cooking!
Sunday lunch: Spaghetti Pie, Green Beans
This is sort of a random question but seeing your beef with lentils on the menu it reminded me. Are lentils considered a “gassy” food like beans? I’ve had to cut out pretty much all foods labeled as such because of nursing the babe – broccoli, beans, etc. I have a few lentil recipes in my “to try” binder & wasn’t sure about doing them right now.
Lentils are a legume but I personally don’t get gassy on them so I don’t know! Sorry I’m not much of a help…
Anyone else out there know anything about this?
Guess I could always give it a try & see what happens. I feel so guilty though if he has problems – wish he didn’t have such a sensitive tummy!
We just had sweet potatoes for supper tonight. I make a homemade BBQ sauce in my iron skillet, toss in chopped sweet potatoes and cooked beans and put it in the oven for a good 45-60 minutes, maybe stir a few times. Delish.
BBQ beans and sweet potatoes. That’s sounds yummy!
