Nothing much interesting this week other than some cabbage to use up (in the beirocks). It’s been in the crisper for over a month. High time it’s been used, I believe.
Monday: Beirocks, Baked Sweet Potatoes, Creamed Spinach, Applesauce
Tuesday: Cornmeal Mushroom Casserole, Green Beans, Pickles
Wednesday: Stir-Fried Beef and Vegetables (Extending the Table, p. 239), Rice
Thursday: Pork and Sauer Kraut, Mashed Potatoes, Green Beans, Applesauce
Friday: TBA – company is coming and I need to come up with something to eat!
Saturday: Oven Cheese Fondue, Broccoli, Applesauce
Sunday noon: Fettuccini and Mushroom Lasagna, Green Beans, Bread

We’re having company on Friday night, too – the pilot and his wife who flew us over Christmas! I found out that his favorite dish is chicken and dumplings, so that’s what I’m making
I have not made it. My aunt did at a family pot luck a few months back and I have been hankering to make it ever since. It was delicious!
I’ve never made chicken and dumplings! I decided on a buffet containing several soups and breads. There will be about 15 people here so we won’t be having a sit down dinner
