I have a few small casseroles in the freezer. None of them are large enough to make a full meal for the family. When I make a casserole that fits in a 9 x 13 pan, I usually put most of it in an 8 x 8 pan and the remainder in a loaf pan. Then I stash them in the freezer until I need them…either using one for a quick lunch for the kids and I or combining several and making a supper out of them. That’s what I’ll do this week.
The sweet potatoes are dwindling…not many left and the remaining ones are looking pretty shriveled. I think I’ll pick out one or two nice ones to keep for starting sprouts for the garden and then roast up the rest for mashing and freezing.
Monday: Venison Steaks, Mashed Sweet Potatoes, Coleslaw
Tuesday: Sloppy Joes (with this for the bread), Corn, Green Beans
Wednesday: Super Stuffed Tortillas, Pickles
Thursday: Beef Stew, Bread
Friday: Pizza (I’ll aim for the yeast dough but probably end up using this), Apple sauce, Carrot Sticks
Saturday: Chili, Cornbread, Pickles
Sunday: “Freezer Food”
