I cooked a large pot of rice for company yesterday, hoping for leftovers. I was right…so I’ll use that in my casserole on Monday. I also have bierrocks in the freezer from when I made a batch two weeks ago. That will be a super simple supper one evening. And the rest are just a conglomeration of recipes I want to make…some new, some tried and true.
Monday: Chicken, Broccoli, and Rice Casserole, Applesauce
Tuesday: Popover Pizza (LOL American Heritage Cookbook page 26), Dill Beans, Pickled Beets
Wednesday: Corn Cheese Pie (The Brown Bag Lunch Cookbook page 158), Green Beans
Thursday: Fiesta Beef Hash (LOL American Heritage Cookbook page 22), Broccoli
Friday: Stuffed Cabbage Rolls, Green Beans
Saturday: Bierrocks, Applesauce
Sunday: Noodle and Beef Casserole (Mennonite Community page 124), Green Beans
For the Bierrocks, do you freeze them before or after you bake? They look like they’d be great to have on hand for something quick.
I froze them after baking. Haven’t tried them after frozen yet so they might be terrible but I’m guessing they’ll still be good.
