I don’t know what I should call this. Fried corn bread with greens and fried eggs? That’s a bit of a mouthful but that’s exactly what it is. I was really craving greens the other morning so I whipped this up for myself.
It’s not much of a recipe, just more an idea in case you, too, are thinking you’d like to eat a pile of greens.
Take a slice or two of leftover corn bread (I need to post my recipe!) and fry it in a bit of butter until nice and brown on both sides. Place on a plate.
Meanwhile, mince a clove of garlic and throw it in a small pan of hot oil or butter. Stir a few seconds and then throw in some greens. I happened to use frozen beet greens but spinach, chard, or kale would work, too. Season with salt and pepper and saute until cooked through. Dump the greens on top of the corn bread.
Next, fry an egg or two. Make sure to season these with salt and pepper, too. I like to leave my eggs runny so the yolk soaks down onto the greens and corn bread.
Anyway, place the eggs on top of everything and immediately chow down.

I’m new to gardening; last year was my first and I made tons of errors. One of the errors I just now realized! I had planted way more beets than my family could consume. I love beets and greens. I ended up tossing most of the greens because we just couldn’t eat them fast enough. DUH! I have no idea why I didn’t think to freeze them! Could you please give me a quick tutorial on how to freeze greens? Maybe you have on this site already? (I’m new to your site as of yesterday.) Do I need to blanch them first?
And, as a tidbit from me as appreciation for enlightening me: To get a perfectly round fried egg, fry it in an onion ring. The onion adds a yummy flavor as well.
an onion ring! Splendid idea except my homegrown onions all have double centers so they don’t make nice round rings
Oh well, if I have to buy some before this year’s crop is ready, I’ll have to try this!
Freezing greens: for chard and beet greens, I just chop them up (raw) in whatever size I want and then throw them into bags. I do steam spinach until wilted before freezing it. Not sure why I do them differently but I like the products so I’m happy! Maybe someone else out there has some better ideas?

Yum! This looks a little like what I’ve been eating for breakfast lately. I add any cooked vegetables that I find in the fridge and splash it all with balsamic.
