I’m dubbing this week the week of the broccoli. I know, I’m so original. Thanks to all of your suggestions, I have a few recipes to try/make. So-so broccoli 4 times in one week might be a bit much but I’m going to give it a go.
Monday: Bang Bang Chicken (Extending the Table p 228), Rice
Tuesday: Scalloped Potatoes, Baked Corn, Green Beans (I know…lots of starch!)
Wednesday: Orange Beef Broccoli Stir Fry, Rice
Thursday: Tilapia Fillets, Oven Fries, Green Beans
Friday: Pesto and Broccoli Pasta (this with broccoli added)
Saturday: Beef Pot Roast, Mashed Potatoes, Green Beans
Sunday: Chickan Divan
Desserts: Vanilla Pudding with Strawberry Sauce (leftovers will be eaten on waffles the next morning…our favorite breakfast!), Chocolate Peanut Butter Sandwich Cookies
Ooo, you need a creamy cheesy potato broccoli soup, too!
