This was a tasty variation on the normal waffle. I especially liked the maple glazed apples served on top. Bananas would also be delicious. Pears, too. Anything that pairs well with peanut butter, really.
Whole Wheat Peanut Butter Waffles
Adapted from Everyday Food magazine
1 cup (4 1/4 oz) sprouted whole wheat pastry flour
1 t baking powder
1/2 t baking soda
1/4 t salt
2 T (1 oz) butter, melted
3 T (1 5/8 oz) natural peanut butter
1 cup (8 oz) buttermilk
1 large egg
Mix together dry ingredients. Mix together wet ingredients. Combine the two. Cook waffles in a heated waffle iron until done. Serve immediately with maple syrup and maple glazed apples.
Yield: 8 square waffles (two full waffle irons)
Maple Glazed Apples
2 apples, peeled and thinly sliced
3 T pure maple syrup
2 t butter
Heat the butter in a skillet. Add the apples and saute a few minutes. Pour in the syrup and cook another couple of minutes or until the apples are crisp tender. Serve immediately.
