I realize this looks like a pile of orange mush but it tastes like so much more than that! A hint of maple, a dab of butter, and a dash of cinnamon. Yum.
Baked Mashed Sweet Potatoes
I think I made this up.
2 1/4 lb sweet potatoes (about 4 medium)
1 1/2 cups pureed butternut squash
1/3 cup maple syrup
2 T butter
1/2 t salt
Cook the sweet potatoes in boiling water until soft. Cool and peel. Puree along with the remaining ingredients. Spread into a greased 8-inch casserole dish and bake at 350 for about 30 minutes or until a tad crispy on top.
Yield: 6 servings
