Mmmm, a yummy breakfast to wake up to. Or bedtime snack. I think next time I’ll up the amount cinnamon.
Apple Cinnamon Crunch Granola
Adapted from the More With Less cookbook
4 cups rolled oats
1/2 cup coconut
1/2 cup chopped pecans
1/2 cup sliced almonds, roughly chopped
1 t cinnamon
1/4 t salt
3/8 cup honey
1/4 cup oil
2 T fruit juice of choice
6 oz (4 cups) dried apples, chopped
In a large bowl, mix the oats, coconut, nuts, cinnamon and salt. In a separate bowl, combine the honey, oil, and juice. Combine the two mixtures and spread on a large cookie sheet with sides. Bake at 300 for about 45 minute, stirring every 15 minutes, until golden brown. Cool and stir in the dried apples. Store in an airtight container or jar.
Yield: 2 1/2 quarts
