I won’t claim this is the best chocolate chip cookie recipe. There are far too many “Best Chocolate Chip Cookie” recipes out there. But this does happen to be our favorite and this time I decided to make mini ones for my little brother’s birthday gift.
Chocolate Chip Cookies
Recipe adapted from the Mennonite Community Cookbook.
1/2 cup unsalted butter
1/2 cup sugar
1/2 cup brown sugar
1 t vanilla
1 cup whole wheat pastry flour
1/2 cup all-purpose flour
1/2 t baking soda
1/2 t salt (use just a pinch if your butter is salted)
5-6 oz mini chocolate chips
In a small bowl, combine the flours, baking soda, and salt. Set aside.
Cream the butter and sugars together for 5 minutes or until the mixture is fluffy. Beat in the egg and vanilla. Stir in the dry ingredients and then the chocolate chips. Drop by tiny spoonfuls (maybe a large marble size?) onto parchment-lined cookie sheets and bake at 375 for 7 to 9 minutes or until just barely starting to brown around the edges. Remove from pans and cool on a wire rack.
Yield: maybe 5 dozen normal size cookies and 8 dozen tiny ones
