The world may just come to an end. In the past 2 days, I’ve had 5 mugs of hot tea. I think I’ve only had 3 mugs total in my whole life before that. Maybe not. That’s an exaggeration. But I do dislike the stuff.

I think a day like today calls for this soup. Easy. Warm. Delicious. When I don’t know what to make for lunch or supper, this is often a recipe I turn to. Serve it with grilled cheese and sweet pickles. Not a completely balanced meal but it’s better than take-out.
Adapted from the More With Less cookbook
2 T butter
2 T chopped onion
3 – 4 T all-purpose flour
1/2 t salt
1/4 t freshly ground black pepper
2 t sugar
2 cups plain tomato juice
1 1/2 cups milk (or half and half if you are feeling particularly naughty)
Melt the butter over low heat in a 2-quart sauce pan. Add the onions and cook until soft, but not browned. Whisk in the flour, salt, pepper, and sugar. While quickly whisking, slowly pour in the tomato juice. Cook and stir until boiling. Pour in the milk and heat through.
Yield: 4 cups
