I’m still on the hunt for more “sugar-free” snacks and desserts. I did a lot of searching on The Nourishing Gourmet and she has some tasty looking recipes. This is one of them. I always knew you could thicken fruit juice with gelatin but never really tried it. Then Brad requested I get some cranberry juice for his upset stomach last week and I thought…perfect! I’ll try out that jello! The kids and I loved it. Brad, not so much. Oh well! You win some, you lose some.
You can use any assortment of juice and fruit. I really liked the cranberry and blueberries together. Just make sure you use juice that’s not sweetened…otherwise it sort of defeats the purpose of “sugar-free.” Maybe I should say processed sugar-free because that’s what it is. There is certainly still sweetener.
I know this is a strange photo of gelatin. I wasn’t sure what to do with the wobbly stuff. I had put it in custard cups and I guess it didn’t set up quite as thick as I was expecting because when I unmolded it, it slumped. A lot.
Adapted from The Nourishing Gourmet
2 cups unsweetened fruit juice, divided (pineapple* is not recommended)
2 T agave
3 T cold water
1 T plain gelatin
1/2 – 1 cup fruit, fresh or frozen (again, pineapples aren’t the best)
In a medium size bowl, soak the gelatin in the water while you prepare everything else.
Heat 1 cup of juice and the agave in a sauce pan to boiling. Pour the hot juice over the soaked gelatin and whisk until dissolved. Stir in the cold juice. Divide the fruit between 5 custard cups. Pour the warm gelatin over top. Chill. Once cold, you can cover them. When set, enjoy as you please.
Yield: 5 small servings
*Something in pineapples prevent the gelatin from setting up. I’ve heard that if you cook them, they will be fine but I’ve never tried it.

OooO! I want to try it! This may be a really dumb question, but where would one buy gelatin? Like, where in the store is it found?
I get it at a bulk food store but I think in the regular grocery store it’d be in the baking isle because that’s where the flavored Jell-o is.
