Such a simple, filling breakfast. And something I’m allowed to eat as long as it’s made with 100% whole wheat bread. I think breakfast is the most difficult meal to give up processed sugar and white flour. The other morning found me REALLY wanting a bowl of cereal (and I don’t usually crave bought cereal). I made a toad in the hole instead and was satisfied.
1 slice bread
Cut a 2 inch hole out of the middle of the bread. Heat a skillet over medium heat. Add a spot of butter and let it melt. Swirl it around the pan to coat and then drop in your bread (the slice and the cutout). Break the egg into the hole, sprinkle with salt and pepper and cover. Flip when the bottom of the bread is nicely browned. Cook to desired doneness (I like mine runny).
