Another good breakfast. Personally, I love it. I can’t get the rest of my family to feel the same!
This can be made ahead. Just pour it into your baking dish, throw it in the oven, and put the oven on time bake. What a lovely scent to wake up to! Roll out of bed, cut a steaming square, and pour that cold milk and fruit on top. I’m making myself hungry. Maybe I ought to go eat some breakfast. It’s scrambled eggs this morning!
Adapted from my mom’s recipe
4 1/2 cups (15 3/4 oz) quick oats
1 T baking powder
1 t salt
1 t cinnamon
1 1/2 cups (12 oz) milk
6 T canola oil
3/4 cup (6 oz) applesauce
2/3 cup (8 oz) agave (or 1 cup sugar)
Mix everything together in a big bowl. Pour into an ungreased 9 x 13 inch baking dish. Bake at 350 for about 30 minutes or until tender to the touch. Serve warm or cold with milk and fruit.
