1 cup (4 1/4 oz) sprouted whole wheat pastry flour
1/2 cup (2 1/2 oz) all-purpose flour
1/2 t baking soda
1/2 t cinnamon
1/2 t allspice
3/4 t ground ginger
1/4 cup (2 oz) butter, softened
1/4 cup (1 3/4 oz) cane sugar
1/2 cup (6 oz) molasses
1/2 cup (4 oz) buttermilk or sour milk
Stir together the flours, salt, and spices. Set aside. Cream the butter and sugar. Beat in the egg and molasses. Add the dry ingredients to the creamed mixture alternately with the milk. Pour into a greased 7 x 11 inch baking dish and bake at 350 for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Serve warm with fresh apple sauce.
