I made a successful batch of aged cheese! I broke open my jalapeno cheddar a few nights ago. It is delicious. The cheddar can be tasted, it doesn’t dry out your mouth, and it even melted nicely in our quesadillas and stuffed zucchini. This one success (out of about 8 failures) makes me want to keep trying! I haven’t been making much hard cheese lately but once the garden slows down, I want to get back into it.
The garden is, of course, still going strong. Nothing new is ready to harvest, just more of the same. It’s terribly wet right now so it’s hard to get out there and pull weeds. Hopefully I can take care of some of them this week. It’s to be horribly hot, though, so it’s more likely that I’ll stay inside!
