I’ve always looked at Asian recipes that call for peanut butter and thought, “Ugh, why would anybody put peanut butter in a savory dish? It sounds horrendous!” But then I went and did it. And I went and enjoyed it. Immensely.
You see, Brad grilled up those salmon fillets the other night and I wanted something Asian-y to go with them. I realize the salmon marinade has Cajun spice in it but whatever, I thought the two went quite well together. With the bright peas and peppers floating amidst the dark noodles, it was a beautiful sight to behold.

1 pound whole grain spaghetti
1/2 cup low-sodium soy sauce
2 T molasses
1 cup frozen peas
2 red peppers (fresh or frozen), diced or sliced
1/4 of a medium onion, thinly sliced
1/2 cup creamy peanut butter
6 T cider vinegar
1/4 cup Sucanat (or brown sugar)
4 t sesame oil
2 t hot sauce
2 T sesame seeds (yes, I forgot to garnish the noodles with these)
Cook the spaghetti until al dente. Meanwhile, simmer the soy sauce and molasses for a few minutes on low. Remove from heat and stir in the peas, peppers, onion, peanut butter, vinegar, sucanat, sesame oil, and hot sauce. When the spaghetti is al dente, drain it and then toss with the sauce. Sprinkle with the sesame seeds and serve warm or chilled.

Oh, we love peanut butter in dishes. Our favorite is Bang Bang Chicken from Extending the Table (also on my blog). I just made it again the other night and can’t get enough of it! Your noodles look good. I’ll have to give them a try. So glad you crossed over:-).
You know, I have to admit that the Bang Bang chicken was one recipe I turned up my nose at. Guess I’ll have to try it now 🙂

I would love your noodles…minus the ginger. I’m not a fan of fresh ginger! what is wrong with me?! Maybe I ought to try it again. It has been a while…
You know why I can’t do fresh ginger anymore? Everyone told me it would settle my stomach when I was pregnant. It didn’t, and now the smell/taste always brings me back to that time of yucky stomachy stuff! Haha
