These things are addicting. My cousin, of Mama’s Minutia, raved about these recently so I had to see for myself what all the fuss was about. They are good, great, wonderful, everything she said and more.
Sweet and Sour Lentils
Adapted from the More With Less Cookbook
1 cup lentils
2 1/2 cups stock or broth (any kind)
1 bay leaf
1 t salt
2 T onion
1 clove minced garlic
2 t butter
1/4 cup fruit juice
1/4 cup cider vinegar
1/4 cup brown sugar
pinch ground cloves
In a pot, bring the lentils, stock, bay leaf and salt to a boil. Simmer 20 minutes or until lentils are soft. Meanwhile, saute the onion and garlic in the butter. When the lentils are soft, add the onions and the remaining ingredients. Heat and serve over rice, any kind will do. These can be a side dish or a main dish.
Yield: about 6 servings

Oh for heaven’s sake. This family will be the death of me. I eat WHITE rice at least once a week. I don’t care if I’m fatter and don’t live as long…at least I’m happier!
